Ingredients
  

  • 2 cups fresh strawberries hulled and sliced
  • 1 large cucumber diced
  • 1/4 red onion thinly sliced
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup feta cheese crumbled (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the sliced strawberries, diced cucumber, red onion, and chopped mint leaves.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well blended.
  3. Pour the dressing over the salad mixture and gently toss to combine.
  4. If using, sprinkle the crumbled feta cheese on top.
  5. Chill the salad in the refrigerator for at least 15 minutes before serving to allow the flavors to meld.
