Method
 

Step-by-Step Instructions
  1. Wash the cucumbers and tomatoes under cool running water. Pat them dry and slice the cucumbers into bite-sized pieces and quarter or halve the tomatoes.
  2. Thinly slice the red onion and soak in cold water for 10 minutes for a milder flavor. Drain and add to the vegetables.
  3. In a large mixing bowl, combine the sliced cucumbers, tomatoes, and red onions. Gently mix without smashing the tomatoes.
  4. In a separate bowl, whisk together olive oil, vinegar or lemon juice, salt, and pepper. Add chopped garlic if desired.
  5. Pour the dressing over the mixed vegetables and gently toss to coat them evenly without crushing the tomatoes.
  6. Sprinkle the fresh herbs over the salad and toss lightly before serving.
  7. Allow the salad to sit for 10-15 minutes or chill in the refrigerator before serving.
