- In a mixing bowl, beat 1 cup of mascarpone cheese until smooth and creamy.
- In a separate bowl, whip 1 cup of heavy whipping cream until soft peaks form—about 3-4 minutes.
- Gently fold the whipped cream into the mascarpone, followed by 1 cup of finely chopped pistachios, 1/2 cup of powdered sugar, and 1 teaspoon of vanilla extract.
- Spoon the pistachio mousse into elegant serving glasses, filling each glass halfway and tap gently to settle.
- Melt 6 ounces of dark chocolate over a double boiler or in the microwave, stirring frequently until smooth and let cool slightly.
- Pour the ganache over the layered mousse in each glass, filling to the brim and smoothing the top if necessary.
- Cover the glasses with plastic wrap and refrigerate them for at least 4 hours or overnight.
- When ready to serve, garnish with chopped pistachios or chocolate shavings.
