Baking Instructions
- Preheat the oven to 350°F (175°C). Gather your baking supplies.
- Melt ½ cup of butter in a saucepan over medium heat for about 3 minutes, then mix in 1 cup of brown sugar until smooth. Cool for 10 minutes.
- Add 1 cup of grated carrots, 1 large egg, and 1 teaspoon of vanilla extract to the cooled mixture, and mix until combined.
- Sift in 1 cup of flour, ½ teaspoon of salt, and 1 teaspoon of cinnamon (if using). Gently fold until just combined. Add chopped pecans if desired.
- Line an 8x8 baking pan with parchment paper, pour the batter in, and spread evenly.
- Bake for 19 to 23 minutes, or until a toothpick comes out clean. Cool completely in the pan.
- For the frosting, beat together 4 oz of cream cheese and ¼ cup of softened butter until smooth. Gradually add in 2 cups of powdered sugar and 1 teaspoon of vanilla, whipping until fluffy.
- Once cooled, spread the cream cheese frosting over the blondies and sprinkle with chopped pecans. Chill before slicing.
