  • ½ cup butter melted
  • 1 cup brown sugar can substitute with granulated sugar
  • 1 large egg can replace with a flax egg for vegan option
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 1 cup grated carrot can substitute with zucchini
  • 1 cup flour or gluten-free flour blend
  • ½ teaspoon salt
  • 1 teaspoon cinnamon optional
  • ½ cup chopped pecans optional
For the Frosting
  • 4 oz cream cheese softened
  • ¼ cup additional butter softened
  • 2 cups powdered sugar can use sugar substitute
  • 1 teaspoon vanilla extract for frosting
  • ½ cup chopped pecans for garnish

Method
 

Baking Instructions
  1. Preheat the oven to 350°F (175°C). Gather your baking supplies.
  2. Melt ½ cup of butter in a saucepan over medium heat for about 3 minutes, then mix in 1 cup of brown sugar until smooth. Cool for 10 minutes.
  3. Add 1 cup of grated carrots, 1 large egg, and 1 teaspoon of vanilla extract to the cooled mixture, and mix until combined.
  4. Sift in 1 cup of flour, ½ teaspoon of salt, and 1 teaspoon of cinnamon (if using). Gently fold until just combined. Add chopped pecans if desired.
  5. Line an 8x8 baking pan with parchment paper, pour the batter in, and spread evenly.
  6. Bake for 19 to 23 minutes, or until a toothpick comes out clean. Cool completely in the pan.
  7. For the frosting, beat together 4 oz of cream cheese and ¼ cup of softened butter until smooth. Gradually add in 2 cups of powdered sugar and 1 teaspoon of vanilla, whipping until fluffy.
  8. Once cooled, spread the cream cheese frosting over the blondies and sprinkle with chopped pecans. Chill before slicing.
