- In a large mixing bowl, combine Greek yogurt, whipped cream cheese, and honey. Stir until smooth, about 2-3 minutes. Fold in the chopped strawberries.
- Line a baking tray with parchment paper. Scoop the yogurt mixture onto the tray, spreading it into flat discs, about 1/2 cup each, ensuring even thickness.
- Insert popsicle sticks into each yogurt disc. Place the tray into the freezer for 2-4 hours, until solid.
- In a microwave-safe bowl, melt dark chocolate chips and coconut oil in 30-second intervals, stirring until smooth, about 1-2 minutes.
- Remove the frozen yogurt bars from the tray and dip each into the melted chocolate until fully coated. Let excess chocolate drip off.
