Ingredients
  

For the Crust
  • 2 cups all-purpose flour substitute with gluten-free flour blend for a gluten-free version
  • 1/2 teaspoon salt enhances flavor
  • 1 teaspoon baking soda leavening agent
  • 1 teaspoon baking powder additional leavening agent
  • 1 cup unsalted butter softened; use salted butter and omit additional salt if preferred
  • 1 cup granulated sugar can use brown sugar for deeper flavor
  • 2 large eggs binds ingredients together
  • 1 teaspoon vanilla extract adds aroma
  • 1/2 teaspoon almond extract can be replaced with more vanilla if nut allergies exist
For the Filling
  • 1 can cherry pie filling can substitute with other fruit fillings like blackberry, blueberry, or peach
For the Glaze
  • 1 cup powdered sugar sweetens and thickens glaze
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • to taste milk (or half & half or water) adjust consistency

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. Mix together the dry ingredients: all-purpose flour, salt, baking soda, and baking powder in a bowl.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Incorporate eggs, vanilla extract, and almond extract into the mixture.
  5. Combine the wet and dry ingredients until just mixed.
  6. Spread 2/3 of the batter into the prepared baking dish, creating a solid base.
  7. Add the cherry pie filling evenly over the batter, then drop dollops of remaining batter on top.
  8. Bake for 30-35 minutes until golden brown and edges are bubbling.
  9. Allow to cool on a wire rack for at least an hour.
  10. Whisk together powdered sugar, vanilla, almond extract, and milk for the glaze.
  11. Drizzle glaze over cooled bars and let it set before cutting into squares.
