Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C) and grease a meatloaf pan.
  2. In a skillet over medium heat, add olive oil and sauté the chopped onion until soft. Add minced garlic and cook for an additional minute.
  3. In a large bowl, combine ground chicken, parsley, egg, pepper, and salt. Fold in the sautéed onion and garlic mixture.
  4. Transfer the mixture onto parchment paper, pressing it into a rectangle about ¾ inch thick.
  5. Layer deli ham slices over the chicken rectangle, followed by Swiss cheese slices.
  6. Roll the meatloaf using the parchment paper, tucking in the edges, and place it seam-side down in the greased pan.
  7. Mix together melted butter, apple cider vinegar, Dijon mustard, and sugar substitute for the glaze. Brush over the meatloaf.
  8. Bake in the preheated oven for 1 hour and 20 minutes, checking that the internal temperature reaches 165°F (75°C).
  9. Let the meatloaf rest for 10 minutes before slicing and serve warm garnished with parsley.
