- Preheat your oven to 350°F (175°C) and grease a meatloaf pan.
- In a skillet over medium heat, add olive oil and sauté the chopped onion until soft. Add minced garlic and cook for an additional minute.
- In a large bowl, combine ground chicken, parsley, egg, pepper, and salt. Fold in the sautéed onion and garlic mixture.
- Transfer the mixture onto parchment paper, pressing it into a rectangle about ¾ inch thick.
- Layer deli ham slices over the chicken rectangle, followed by Swiss cheese slices.
- Roll the meatloaf using the parchment paper, tucking in the edges, and place it seam-side down in the greased pan.
- Mix together melted butter, apple cider vinegar, Dijon mustard, and sugar substitute for the glaze. Brush over the meatloaf.
- Bake in the preheated oven for 1 hour and 20 minutes, checking that the internal temperature reaches 165°F (75°C).
- Let the meatloaf rest for 10 minutes before slicing and serve warm garnished with parsley.
