Preparation Steps
- Preheat your grill to medium-high heat, around 400°F (200°C). Ensure grill grates are clean and oiled.
- Place fresh corn cobs directly on the grill and grill for approximately 15 minutes, turning occasionally.
- Remove corn from the grill and let it cool for a few minutes, then cut the kernels into a mixing bowl.
- Chop bell peppers and red onion into bite-sized pieces, add to the bowl with corn.
- Squeeze fresh lime juice and drizzle olive oil over the mixture; toss lightly.
- Season with salt and pepper to taste, and fold in chopped cilantro.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
