Ingredients
  

For the Sweet Potatoes
  • 4 large Sweet Potatoes Substitute with butternut squash for variety.
  • 2 tablespoons Extra-Virgin Olive Oil Avocado oil is a great substitute for high-heat grilling.
  • 1 teaspoon Kosher Salt Sea salt can also be used.
For the Herby Yogurt Dressing
  • 1 cup Greek Yogurt Consider dairy-free yogurt for a vegan option.
  • 2 scallions Green Onions Chives can work well in their place.
  • 2 tablespoons Fresh Dill Fresh parsley is a decent substitute.
  • 2 cloves Garlic Garlic powder can be used if fresh isn't available.
  • 5 leaves Fresh Basil Cilantro can be an interesting twist.
  • 2 tablespoons Fresh Lemon Juice Lime juice can be used as an alternative.

Method
 

Cooking Instructions
  1. Preheat the grill to medium-high heat (approximately 400°F), about 10-15 minutes, keeping the lid closed.
  2. Peel the sweet potatoes and cut them into wedges that are about 1½ inches thick. Place the wedges on a rimmed sheet pan.
  3. Drizzle the sweet potatoes with olive oil and sprinkle generously with kosher salt. Toss to coat them evenly.
  4. Arrange the sweet potato wedges on the grill, cut side down. Grill for about 15 minutes, turning every 2-3 minutes until fork-tender with a nice char.
  5. While grilling, prepare the herby yogurt dressing by blending Greek yogurt, green onions, dill, garlic, basil, lemon juice, and remaining salt until smooth.
  6. Remove the sweet potatoes from the grill, arrange them on a serving plate, and drizzle with herby yogurt dressing. Garnish with additional dill.
