- Preheat the grill to medium-high heat (approximately 400°F), about 10-15 minutes, keeping the lid closed.
- Peel the sweet potatoes and cut them into wedges that are about 1½ inches thick. Place the wedges on a rimmed sheet pan.
- Drizzle the sweet potatoes with olive oil and sprinkle generously with kosher salt. Toss to coat them evenly.
- Arrange the sweet potato wedges on the grill, cut side down. Grill for about 15 minutes, turning every 2-3 minutes until fork-tender with a nice char.
- While grilling, prepare the herby yogurt dressing by blending Greek yogurt, green onions, dill, garlic, basil, lemon juice, and remaining salt until smooth.
- Remove the sweet potatoes from the grill, arrange them on a serving plate, and drizzle with herby yogurt dressing. Garnish with additional dill.
