Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together honey, fresh lime juice, olive oil, minced garlic, ground cumin, optional chili powder, salt, and pepper until fully combined.
  2. Place the chicken thighs in a resealable plastic bag or a shallow dish, then pour the prepared marinade over the top. Seal the bag or cover the dish and refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat, aiming for around 400°F (200°C). Lightly oil the grill grates.
  4. Remove the chicken thighs from the marinade and let any excess drip off. Discard leftover marinade.
  5. Place the chicken thighs skin-side down on the hot grill. Cook for 6-8 minutes, then flip and grill for another 6-8 minutes until the internal temperature reaches 165°F (75°C).
  6. Transfer the chicken to a platter and let it rest for about 5 minutes.
  7. Garnish the chicken with fresh cilantro and serve with lime wedges.
