Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and coat a 9x9 inch baking dish with olive oil.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add finely chopped onion and sauté for 3-4 minutes until translucent, then stir in minced garlic for another minute.
  3. In a mixing bowl, combine sliced zucchini, sautéed onion, garlic, cream cheese, mozzarella, Parmesan, eggs, almond flour, oregano, salt, and pepper. Mix well for 2-3 minutes.
  4. Pour the mixture into the prepared baking dish, spreading it evenly. Drizzle with remaining olive oil.
  5. Bake in the preheated oven for 35-40 minutes until golden brown and the center is set.
  6. Remove from the oven and let cool for 5-10 minutes before slicing and serving.
