Sorbet Base
  • 3-4 pieces ripe yellow peaches peeled and sliced
  • 0.5 cups caster sugar or granulated sugar blended into fine powder
  • 1-2 tablespoons lemon juice fresh is ideal

Method
 

Preparation
  1. Wash and peel the peaches. Slice each peach into 8 segments, discarding the pits.
  2. Add peach slices and caster sugar to a food processor or blender. Blend on high for 1–2 minutes until smooth.
  3. Incorporate the lemon juice into the peach mixture. Blend for 30 seconds to 1 minute.
  4. Transfer the peach mixture into an airtight container and freeze for 6–7 hours or until firm.
  5. Remove the sorbet from the freezer and let it sit at room temperature for 5 minutes before serving.
