Preparation
- Wash and peel the peaches. Slice each peach into 8 segments, discarding the pits.
- Add peach slices and caster sugar to a food processor or blender. Blend on high for 1–2 minutes until smooth.
- Incorporate the lemon juice into the peach mixture. Blend for 30 seconds to 1 minute.
- Transfer the peach mixture into an airtight container and freeze for 6–7 hours or until firm.
- Remove the sorbet from the freezer and let it sit at room temperature for 5 minutes before serving.
