Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking dish by lightly greasing it.
  2. In a large mixing bowl, whisk together 4 eggs, 1 cup of sugar, 2 cups of milk or cream, 1 teaspoon of vanilla extract, and a sprinkle of cinnamon until well combined.
  3. Cube your slightly stale bread into bite-sized pieces, measuring about 6 cups. Add these cubes to the custard mixture and let it sit for 20 minutes.
  4. Gently fold in 2 cups of chopped rhubarb until evenly distributed.
  5. Pour the mixture into your prepared baking dish and brush the top with melted butter.
  6. Bake for approximately 40-50 minutes, checking at 40 minutes. The pudding is done when it's set in the center and golden brown on top.
