Step-by-Step Instructions
- Preheat your oven to 350°F (175°C). Prepare a 9” x 9” baking pan ungreased.
- In a medium bowl, combine flour, oats, sugar, and salt. Cut in the butter until it resembles coarse crumbs.
- Press half of the crust mixture into the bottom of the baking pan evenly. Bake for 10 minutes.
- Blend cream cheese, sugar, and egg until smooth. Scrape down the sides of the bowl during mixing.
- Add vanilla extract, cinnamon, and nutmeg to the mixture. Fold in diced rhubarb.
- Spread the cream cheese filling evenly over the pre-baked crust. Sprinkle the remaining crust mixture on top.
- Bake for approximately 40 minutes until lightly browned on top and slightly jiggly in the center.
- Cool completely on a wire rack before slicing into squares.
