  • 2 cups Fresh Rhubarb cut into 1/4 inch pieces
  • 1 cup Flour all-purpose flour
  • 1 cup Oats gluten-free oats for gluten-free option
  • 1 cup Sugar adjust to taste
  • 1/2 cup Butter unsalted
For the Filling
  • 8 oz Cream Cheese at room temperature
  • 1/2 cup Sugar adjust to taste
  • 1 large Egg at room temperature
  • 1 tsp Vanilla Extract
  • 1/2 tsp Cinnamon optional
  • 1/4 tsp Nutmeg optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Prepare a 9” x 9” baking pan ungreased.
  2. In a medium bowl, combine flour, oats, sugar, and salt. Cut in the butter until it resembles coarse crumbs.
  3. Press half of the crust mixture into the bottom of the baking pan evenly. Bake for 10 minutes.
  4. Blend cream cheese, sugar, and egg until smooth. Scrape down the sides of the bowl during mixing.
  5. Add vanilla extract, cinnamon, and nutmeg to the mixture. Fold in diced rhubarb.
  6. Spread the cream cheese filling evenly over the pre-baked crust. Sprinkle the remaining crust mixture on top.
  7. Bake for approximately 40 minutes until lightly browned on top and slightly jiggly in the center.
  8. Cool completely on a wire rack before slicing into squares.
