  • 2 cloves garlic minced
  • 2 large eggs

  • 0.5 cup grated Parmesan cheese optional for dairy-free options
  • 0.5 cup breadcrumbs optional
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika optional
  • 2 tbsp olive oil or melted butter for greasing the baking dish
  • fresh parsley or chives for garnish

Method
 

Preparation Steps
  1. Grate the zucchinis and sprinkle with salt, letting them sit for 10 minutes to extract moisture.
  2. Drain the zucchini in a colander and squeeze out excess liquid.
  3. In a mixing bowl, combine the drained zucchini, onion, garlic, and eggs.
  4. Add cheddar cheese, Parmesan cheese, salt, pepper, and paprika, stirring until all ingredients are combined.
  5. Preheat the oven to 375°F (190°C) and grease a 9x9-inch baking dish.
  6. Transfer the mixture to the greased baking dish, spreading evenly.
  7. If desired, mix breadcrumbs with melted butter and sprinkle on top.
  8. Bake for 25-30 minutes, until set and golden brown.
  9. Allow to cool for 5-10 minutes before slicing and serve with garnish.
