Step-by-Step Instructions for Zucchini Lasagna
  1. Preheat your oven to 375°F (190°C). Prepare your baking dish by lightly greasing it with olive oil or cooking spray.
  2. Slice the zucchini into thin strips, about 1/8-inch thick. Sprinkle with salt and let rest for 15-20 minutes to draw out moisture.
  3. In a mixing bowl, combine ricotta cheese, egg, minced garlic, oregano, basil, salt, and pepper. Stir until smooth.
  4. Heat a skillet over medium heat, add olive oil, and sauté zucchini slices for 3-5 minutes until just tender.
  5. In the greased baking dish, layer marinara sauce, zucchini slices, half of the ricotta mixture. Repeat layers, finishing with mozzarella and Parmesan on top.
  6. Cover with foil and bake for 30 minutes, then remove foil and bake for another 15-25 minutes until cheese is bubbly and golden.
  7. Allow the dish to cool for about 10 minutes before serving. Garnish with fresh basil leaves.
