Step-by-Step Instructions for Zucchini Lasagna
- Preheat your oven to 375°F (190°C). Prepare your baking dish by lightly greasing it with olive oil or cooking spray.
- Slice the zucchini into thin strips, about 1/8-inch thick. Sprinkle with salt and let rest for 15-20 minutes to draw out moisture.
- In a mixing bowl, combine ricotta cheese, egg, minced garlic, oregano, basil, salt, and pepper. Stir until smooth.
- Heat a skillet over medium heat, add olive oil, and sauté zucchini slices for 3-5 minutes until just tender.
- In the greased baking dish, layer marinara sauce, zucchini slices, half of the ricotta mixture. Repeat layers, finishing with mozzarella and Parmesan on top.
- Cover with foil and bake for 30 minutes, then remove foil and bake for another 15-25 minutes until cheese is bubbly and golden.
