Steps
- Start by patting the cod fillets dry with paper towels to remove excess moisture, ensuring they will brown nicely.
- In a medium mixing bowl, combine gluten-free flour, ground coriander, paprika, ground cumin, salt, black pepper, and red pepper flakes. Whisk together until evenly mixed.
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together freshly squeezed lemon juice, high-quality extra virgin olive oil, and melted unsalted butter until fully blended. Stir in minced garlic.
- Dip each cod fillet into the lemon-garlic mixture, then dredge in the flour-spice mixture.
- In an oven-safe skillet, heat olive oil over medium-high heat. Add the coated cod fillets and sear for about 2 minutes on each side until golden brown.
- Drizzle the remaining lemon-garlic sauce over each fillet and transfer the skillet to the preheated oven. Bake for 8 to 10 minutes, until the fish flakes easily with a fork.
