Purple Frosting

Method
 

Cupcake Preparation
  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with colorful liners.
  2. Whisk together flour, baking powder, and salt in a medium bowl.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time.
  4. Mix in rehydrated ube powder, ube extract, and milk until smooth.
  5. Distribute batter into lined cupcake trays, filling each about two-thirds full.
  6. Bake in the preheated oven for 20 minutes. Check for doneness with a toothpick.
  7. Cool in the tray for 10 minutes, then transfer to a wire rack.
Frosting Preparation
  1. Beat together butter, powdered sugar, ube powder, and vanilla until light and fluffy.
  2. Adjust consistency with a splash of milk if needed.
  3. Once cupcakes are cooled, frost generously with the purple frosting.
