Method
 

Preparation
  1. Select fresh Persian or English cucumbers and slice them diagonally into thin pieces.
  2. In a large mixing bowl, toss the cucumber slices with salt and let sit for 10-15 minutes.
  3. Drain excess liquid, rinse the cucumber slices under cold water, and pat them dry.
  4. In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, and chili oil or red pepper flakes.
  5. Add the dried cucumber slices to the dressing and toss until evenly coated.
  6. Sprinkle with sesame seeds and optional garlic, cover the bowl, and chill for 10 minutes.
  7. Give the salad a gentle toss again before serving.
