- In a large pot, combine the beef broth, onion, ginger, star anise, cinnamon stick, and cloves. Bring to a boil over medium-high heat, then reduce to a simmer. Let it simmer for 30 minutes to allow the flavors to meld. 
- After 30 minutes, remove the onion, ginger, and spices from the broth. Stir in the fish sauce and soy sauce. Keep the broth warm over low heat. 
- Meanwhile, cook the rice noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside. 
- To serve, place a portion of the cooked rice noodles in a bowl. Top with the thinly sliced beef sirloin. 
- Ladle the hot broth over the noodles and beef, allowing the heat to cook the beef slightly. 
- Garnish with fresh basil, cilantro, lime wedges, sliced jalapeƱos, and bean sprouts as desired.
