Method
 

Step-by-Step Instructions
  1. Prepare the brisket by patting dry and applying dry rub of kosher salt, black pepper, and ground paprika. Let sit for 1 hour.
  2. Preheat oven to 350°F (175°C).
  3. In a roasting pan, heat vegetable oil and sear the brisket on all sides for 4-5 minutes.
  4. Cook sliced onions in the same pan until soft, about 10 minutes. Add tomato paste.
  5. Arrange garlic and halved carrots around onions. Return brisket to center, pour juices over it.
  6. Cover tightly and braise in the oven for 1.5 hours.
  7. Lower temperature to 325°F (163°C) and braise for an additional 2 hours.
  8. Remove brisket, allow to rest for 15-20 minutes, then slice against the grain.
