- Prepare the brisket by patting dry and applying dry rub of kosher salt, black pepper, and ground paprika. Let sit for 1 hour.
- Preheat oven to 350°F (175°C).
- In a roasting pan, heat vegetable oil and sear the brisket on all sides for 4-5 minutes.
- Cook sliced onions in the same pan until soft, about 10 minutes. Add tomato paste.
- Arrange garlic and halved carrots around onions. Return brisket to center, pour juices over it.
- Cover tightly and braise in the oven for 1.5 hours.
- Lower temperature to 325°F (163°C) and braise for an additional 2 hours.
- Remove brisket, allow to rest for 15-20 minutes, then slice against the grain.
