Step-by-Step Instructions
  1. In a medium bowl, whisk together soy sauce, ketchup, brown sugar, minced ginger, garlic, and avocado oil to create a flavorful marinade. Place chicken thighs in a resealable bag and pour the marinade over to coat. Seal and refrigerate for at least 2 hours or overnight.
  2. Remove chicken from marinade. Pour remaining marinade into a saucepan and bring to a gentle simmer over medium heat for 5-7 minutes until it thickens slightly.
  3. Preheat grill to medium-high heat (375°F - 400°F). Lightly oil grill grates. Grill chicken thighs for 5-7 minutes per side until internal temperature reaches 165°F, basting with simmered marinade during the last minutes.
  4. Remove chicken from grill and let rest for 5 minutes. Serve alongside steamed rice, grilled pineapple, or fresh tropical salad.
