Ingredients
  

  • 1 pound sea scallops patted dry
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley chopped
  • Lemon wedges for serving

Method
 

  1. Heat a large skillet over medium-high heat and add the olive oil and 2 tablespoons of butter. Allow the butter to melt and foam slightly.
  2. Season the scallops with salt and pepper on both sides. Once the skillet is hot, carefully place the scallops in the skillet, making sure not to overcrowd them. Cook for about 2-3 minutes without moving them until they develop a golden crust.
  3. Flip the scallops and add the remaining 2 tablespoons of butter and minced garlic to the skillet. Cook for an additional 2-3 minutes, basting the scallops with the melted garlic butter.
  4. Remove the skillet from heat and drizzle the lemon juice over the scallops. Sprinkle with chopped parsley for garnish.
  5. Serve immediately with lemon wedges on the side.

Notes
