Ingredients
  

  • 4 large heads of garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme optional
  • 1 teaspoon balsamic vinegar optional

Method
 

  1. Preheat your oven to 400°F.
  2. Slice the tops off the garlic heads to expose the cloves.
  3. Place the garlic heads on a piece of aluminum foil. Drizzle with olive oil and sprinkle with salt, pepper, and thyme if using.
  4. Wrap the garlic heads tightly in the foil.
  5. Place the wrapped garlic on a baking sheet and roast in the preheated oven for 30-35 minutes, or until the cloves are soft and golden brown.
  6. Remove from the oven and let cool slightly before unwrapping.
  7. Squeeze the roasted garlic cloves out of their skins into a bowl. Add balsamic vinegar if desired and mix well.
