  • 8 oz Gluten-free Pasta Use brown rice or corn-based pasta.
For the Salad
  • 6 slices Bacon Cook until crispy.
  • 4 cups Lettuce Toss in just before serving.
  • 1 cup Cherry Tomatoes Cut in half.
  • 1 medium Avocado Cube just before serving.
For the Dressing
  • 1/4 cup Red Onion Chopped.
  • 1/2 cup Vegan Mayonnaise Regular mayo for non-vegans.
  • 2 tbsp Apple Cider Vinegar
  • 1 clove Garlic Minced.
  • Salt & Pepper To taste.

Method
 

Step-by-Step Instructions
  1. Boil the pasta in salted water according to package instructions until al dente.
  2. Cook the bacon in a skillet until crispy, then crumble.
  3. Mix the cooled pasta with bacon, lettuce, and tomatoes in a large bowl.
  4. Whisk together dressing ingredients in a small bowl.
  5. Fold the dressing into the salad until coated.
  6. Add avocado and chives just before serving.
