Cooking Steps
- Preheat the oven to 350°F (175°C).
- In a large pot, heat olive oil over medium heat and sauté onions and garlic for 3-5 minutes until fragrant.
- Add bell peppers and cauliflower to the pot and cook for 5-7 minutes, stirring frequently.
- Stir in fresh spinach and cook for another 2-3 minutes until wilted.
- Reduce heat to low and fold in cream cheese and vegetable broth, stirring until smooth.
- Pour the mixture into a greased baking dish and top with shredded cheddar cheese.
- Bake for 25-30 minutes until cheese is bubbly and golden brown.
- Let cool for 5-10 minutes before serving.
