  • 1 head Cauliflower chopped into small pieces
  • 2 cups Bell Peppers diced
  • 1 cup Onions diced
  • 3 cloves Garlic minced
For the Creaminess
  • 8 oz Cream Cheese softened
  • 1 cup Cheddar Cheese shredded
For the Flavor Base
  • 2 cups Vegetable Broth
For the Nutritional Boost
  • 2 cups Spinach fresh, chopped

Method
 

Cooking Steps
  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, heat olive oil over medium heat and sauté onions and garlic for 3-5 minutes until fragrant.
  3. Add bell peppers and cauliflower to the pot and cook for 5-7 minutes, stirring frequently.
  4. Stir in fresh spinach and cook for another 2-3 minutes until wilted.
  5. Reduce heat to low and fold in cream cheese and vegetable broth, stirring until smooth.
  6. Pour the mixture into a greased baking dish and top with shredded cheddar cheese.
  7. Bake for 25-30 minutes until cheese is bubbly and golden brown.
  8. Let cool for 5-10 minutes before serving.
