Ingredients
  

For the Meatballs
  • 1 lb Ground Beef or ground lamb
  • 2 cloves Garlic, minced
  • 1 small Onion, finely diced or blended
  • 1 cup Breadcrumbs gluten-free if needed
  • 1 tsp Baking Soda
  • 1 cup Fresh Herbs (Parsley, Mint, Coriander) mix your favorites
  • 2 tbsp Olive Oil extra virgin preferred
  • to taste Salt
  • to taste Pepper
For the Roasted Potatoes
  • 2 large Potatoes hearty for roasting
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Oregano
For the Tzatziki Sauce
  • 1 cup Greek Yogurt full-fat recommended
  • 1 medium Cucumber, grated squeeze out excess water
  • 1 tbsp Lemon Juice freshly squeezed
  • 1 tbsp Dill or Mint your choice
For the Salad Base
  • 2 cups Lettuce, chopped
  • 1 cup Tomatoes, diced
  • 1 cup Cucumbers, diced
  • 1 small Red Onion, sliced
  • 1/2 cup Kalamata Olives
  • 2 tbsp Additional Olive Oil
  • 1 tbsp Additional Lemon Juice

Method
 

Prepare and Cook
  1. In a large mixing bowl, combine ground beef, minced garlic, finely diced onions, breadcrumbs, baking soda, fresh herbs, olive oil, salt, and pepper. Mix thoroughly until well combined. Cover and refrigerate for at least 2 hours.
  2. Preheat your oven to 425°F (220°C). Roll the meat mixture into uniform balls and place on a lined baking sheet. Bake for 30–40 minutes or until golden-brown.
  3. Wash and cut your potatoes into wedges. Toss with olive oil, salt, cumin, paprika, and oregano. Spread on a baking sheet and roast for 40–60 minutes until golden and crispy.
  4. In a medium bowl, combine Greek yogurt, grated cucumber, lemon juice, and dill or mint. Chill until ready to serve.
  5. Assemble the bowl by layering lettuce, diced tomatoes, cucumbers, red onion, kalamata olives, roasted potatoes, and meatballs. Top with tzatziki sauce and fresh herbs.
