Preparation Steps
- Soak wooden skewers in water for 20-30 minutes to prevent burning.
- Whisk together mayonnaise, sriracha, sweet chili sauce, honey, and lime juice in a mixing bowl until smooth.
- Marinate cubed chicken in a large bowl with smoked paprika, garlic powder, onion powder, salt, black pepper, and half of the Bang Bang sauce. Let it marinate for 30 minutes to 2 hours.
- Thread marinated chicken pieces onto pre-soaked skewers, leaving space between each piece.
- Preheat grill to high heat (400°F to 450°F) and brush grates with oil to prevent sticking.
- Cook skewers on the grill for 3-4 minutes per side until chicken reaches 165°F and has grill marks.
- Remove skewers from the grill and let them rest for about 5 minutes. Brush with reserved Bang Bang sauce before serving.
