  • 2 pounds Chicken Breasts Cut into 1-inch cubes
  • 2 medium Bell Peppers Any color, cut into chunks
  • 1 large Onion Cut into wedges
For the Cowboy Butter
  • 1/2 cup Unsalted Butter Softened
  • 4 cloves Minced Garlic Fresh preferred
  • 1/4 cup Chopped Parsley Or cilantro
  • 2 tablespoons Lemon Juice Fresh juice
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika Smoked paprika for extra flavor
  • to taste Salt Adjust to taste
  • to taste Pepper Fresh cracked preferred
For Garnish

Method
 

Preparation
  1. Start by cutting the chicken breasts into 1-inch cubes and place in a large bowl.
  2. In a separate mixing bowl, combine softened butter, garlic, parsley, lemon juice, garlic powder, paprika, salt, and pepper until smooth.
  3. Pour half of the cowboy butter mixture over the chicken cubes and toss to coat; marinate for at least 15 minutes.
  4. Thread the marinated chicken onto wooden skewers, alternating with bell peppers and onion wedges.
  5. Preheat the grill to medium-high heat (375°F to 400°F) and oil the grates to prevent sticking.
  6. Grill the skewers for 10-15 minutes, turning occasionally and brushing with remaining cowboy butter.
  7. Once grilled and chicken reaches 165°F internal temperature, remove from grill and let rest.
