- Start by cutting the chicken breasts into 1-inch cubes and place in a large bowl.
- In a separate mixing bowl, combine softened butter, garlic, parsley, lemon juice, garlic powder, paprika, salt, and pepper until smooth.
- Pour half of the cowboy butter mixture over the chicken cubes and toss to coat; marinate for at least 15 minutes.
- Thread the marinated chicken onto wooden skewers, alternating with bell peppers and onion wedges.
- Preheat the grill to medium-high heat (375°F to 400°F) and oil the grates to prevent sticking.
- Grill the skewers for 10-15 minutes, turning occasionally and brushing with remaining cowboy butter.
- Once grilled and chicken reaches 165°F internal temperature, remove from grill and let rest.
