Step-by-Step Instructions for Grilled Fish in Foil
  1. Preheat your grill to medium heat, about 375°F (190°C), or oven to 400°F (200°C).
  2. Cut four large sheets of aluminum foil, about 12 inches long, and lay them flat. Arrange slices of red bell pepper, red onion, and half the minced garlic in the center.
  3. Place one cod fillet atop the vegetables in each packet. Season with salt, black pepper, and remaining minced garlic; sprinkle dried oregano over the fish.
  4. Drizzle half a tablespoon of olive oil over each fillet. Top with fresh parsley, dill, and a slice of lemon. Add a knob of butter if desired.
  5. Fold the edges of the foil to create secure packets, crimping to seal. This retains juices while cooking.
  6. Place packets on the grill or a baking tray in the oven. Grill for 12-15 minutes or bake for 15-18 minutes, until fish flakes easily.
  7. Carefully open packets to avoid steam. Serve the fish alongside roasted vegetables.
