- In a bowl, mix olive oil, balsamic vinegar, minced garlic, kosher salt, and black pepper. Add beef cubes and coat well. Cover and refrigerate for 2-3 hours.
- Wash and cut red and green bell peppers into 1.5 to 2-inch pieces. Slice the Vidalia onion, clean mushrooms, and slice zucchini into thick coins.
- Thread beef cubes and prepared vegetables onto skewers in an alternating pattern.
- Preheat grill to 400°F for about 10-15 minutes.
- Cook kabobs on the grill for 10-15 minutes, turning halfway for even cooking.
- Remove from grill, let rest for a few minutes, then serve with a fresh salad or side dishes.
