Ingredients
  

For the Kabobs
  • 1 pound Beef cubes Use sirloin or beef stew meat
  • 1 medium Red bell pepper Substitute with yellow or orange bell peppers if desired
  • 1 medium Green bell pepper
  • 8 ounces Baby bella mushrooms Keep whole unless larger than 1 inch
  • 1 medium Zucchini Yellow squash can be used as a substitute
  • 1 medium Vidalia onion Yellow or red onion works as well
For the Marinade
  • 1/4 cup Extra virgin olive oil
  • 1/4 cup Balsamic vinegar Red wine vinegar can be used as a substitute
  • 3 cloves Garlic cloves Minced
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper Adjust according to taste

Method
 

Preparation
  1. In a bowl, mix olive oil, balsamic vinegar, minced garlic, kosher salt, and black pepper. Add beef cubes and coat well. Cover and refrigerate for 2-3 hours.
  2. Wash and cut red and green bell peppers into 1.5 to 2-inch pieces. Slice the Vidalia onion, clean mushrooms, and slice zucchini into thick coins.
  3. Thread beef cubes and prepared vegetables onto skewers in an alternating pattern.
  4. Preheat grill to 400°F for about 10-15 minutes.
  5. Cook kabobs on the grill for 10-15 minutes, turning halfway for even cooking.
  6. Remove from grill, let rest for a few minutes, then serve with a fresh salad or side dishes.
