For the Salad
  • 4 yellow peaches ripe but firm
  • 1 tablespoon olive oil for brushing
  • 2 tomatoes Roma or heirloom varieties
  • 4 cups mixed greens or arugula, baby spinach
  • 1 teaspoon sea salt to taste
  • 2 tablespoons lemon juice freshly squeezed
Optional Toppings
  • 1 cup microgreens
  • 1/2 cup feta crumbled, or use vegan cheese
  • 2 tablespoons balsamic vinegar for drizzling

Instructions
  1. Preheat your grill to medium-high heat, around 400°F (200°C).
  2. Cut the yellow peaches in half, remove the pits, and slice each half into quarters. Brush with olive oil.
  3. Place the peach quarters skin-side down on the grill and grill for 3-4 minutes until charred.
  4. Slice the tomatoes into rounds, about half an inch thick.
  5. In a large bowl, layer the mixed greens, grilled peaches, and sliced tomatoes.
  6. Drizzle with lemon juice and sprinkle with sea salt before serving.
