  • 4 medium Peaches sliced
  • 2 cups Blueberries fresh
Dressing
  • 3 tablespoons Olive Oil extra virgin
  • 2 tablespoons Balsamic Vinegar
  • 1 teaspoon Honey optional
Toppings
  • 1 cup Feta Cheese crumbled, optional
  • 1 cup Mint Leaves fresh, chopped

Method
 

Grilled Peaches
  1. Preheat the grill to medium-high heat.
  2. Slice the peaches in half and remove the pit.
  3. Brush the peach halves with olive oil.
  4. Place the peaches cut-side down on the grill and cook for about 3-4 minutes until grill marks appear.
  5. Remove from the grill and let them cool slightly before slicing.
Assemble Salad
  1. In a large mixing bowl, combine the sliced grilled peaches and fresh blueberries.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  3. Pour the dressing over the fruit and gently toss to combine.
  4. Transfer the salad to a serving plate and top with crumbled feta cheese and chopped mint leaves, if desired.
