Grilled Peaches
- Preheat the grill to medium-high heat.
- Slice the peaches in half and remove the pit.
- Brush the peach halves with olive oil.
- Place the peaches cut-side down on the grill and cook for about 3-4 minutes until grill marks appear.
- Remove from the grill and let them cool slightly before slicing.
Assemble Salad
- In a large mixing bowl, combine the sliced grilled peaches and fresh blueberries.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
- Pour the dressing over the fruit and gently toss to combine.
- Transfer the salad to a serving plate and top with crumbled feta cheese and chopped mint leaves, if desired.
