  • 4 slices Bacon Turkey bacon optional
  • 2 tablespoons Fresh Parsley Chives can be used instead
  • 2 stalks Green Onions Shallots can be substituted

Method
 

Preparation Steps
  1. Wash and cut the red potatoes into uniform 1-inch chunks.
  2. In a separate bowl, mix together olive oil, ranch seasoning, garlic powder, salt, and pepper.
  3. Toss the potato chunks in the mixture and let them sit for 5-10 minutes.
  4. Preheat your grill to 400°F.
  5. Transfer seasoned potatoes onto a large piece of aluminum foil and seal it to create a packet.
  6. Grill the foil packet for about 10 minutes, flip and grill for an additional 10 minutes until fork-tender.
  7. Open the foil and sprinkle cheese and bacon over the potatoes.
  8. Return the open packet to the grill for 2-3 minutes to melt the cheese.
  9. Garnish with parsley and green onions before serving.
