Grilled Salmon with Peach Salsa: A Fresh Flavor Boost!

Ingredients
  

  • 2 salmon fillets about 6 ounces each
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 ripe peach diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 tablespoon lime juice
  • 1/2 jalapeño seeded and minced (optional)
  • 1 teaspoon honey optional

Method
 

  1. Preheat your grill to medium-high heat.
  2. Brush the salmon fillets with olive oil and season with salt and pepper.
  3. Place the salmon skin-side down on the grill.
  4. Cook for about 6-8 minutes, then carefully flip and grill for an additional 4-6 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. While the salmon is grilling, prepare the peach salsa by combining diced peach, red onion, cilantro, lime juice, and jalapeño in a medium bowl. Stir gently to mix.
  6. If desired, add honey to the salsa and mix well.
  7. Once the salmon is done, remove it from the grill and let it rest for a couple of minutes.
  8. Serve the salmon topped with the fresh peach salsa.
