- In a large zip-top bag, combine the chicken, salsa verde, olive oil, lime juice, cumin, salt, and black pepper. Seal the bag and massage the mixture into the chicken. Marinate for at least 30 minutes or overnight for best flavor.
- Preheat your grill to medium-high heat, about 400°F. Lightly oil the grates to prevent sticking.
- Place the marinated chicken on the hot grill and grill for about 5 minutes without flipping, until grill marks form. Flip and grill for an additional 4-5 minutes, or until the chicken reaches an internal temperature of 165°F.
- Lower the grill heat to medium-low, place a slice of pepper Jack cheese on top of each chicken breast, cover the grill, and cook for 1 minute to melt the cheese.
- Remove the chicken from the grill and let it rest for a couple of minutes. Optionally garnish with cilantro and serve immediately with lime wedges.
