Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with olive oil.
  2. In a large skillet, heat olive oil over medium-high heat, add ground turkey and sprinkle spices. Cook for 6–8 minutes until browned.
  3. Add diced onions and bell peppers to the skillet, sauté for 3–4 minutes until softened.
  4. Mix in sweet potatoes and spinach, allow spinach to wilt for 2 minutes.
  5. Transfer the mixture to the baking dish, pour chicken broth over, cover with aluminum foil, and bake for 20 minutes.
  6. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10–15 minutes until cheese is bubbly.
