Cooking Steps
- Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
- In a mixing bowl, whisk together soy sauce, pineapple juice, honey, and rice vinegar.
- Place the chicken thighs in a bowl and pour half of the sauce over them. Toss to coat and let marinate for at least 15 minutes.
- Spread the marinated chicken on the sheet pan. Add pineapple, bell peppers, and onion. Drizzle with olive oil and toss gently.
- Roast for 25–30 minutes, flipping chicken and stirring veggies halfway. Brush remaining sauce over chicken in last 10 minutes.
- Broil for an additional 2–3 minutes for extra caramelization, watching closely to avoid burning.
- Remove from oven and serve garnished with sesame seeds, cilantro, or green onions. Serve over rice if desired.
