Ingredients
  

For the Chicken
  • 2 pounds Boneless Skinless Chicken Thighs Can substitute with chicken breasts, reducing cooking time by 5–7 minutes.
For the Pineapple and Veggies
  • 2 cups Pineapple Chunks Fresh is ideal, but canned (drained) works too; reserve some juice for sauce.
  • 2 cups Bell Peppers (Red, Yellow) Any mix of fresh bell peppers can be used.
  • 1 medium Red Onion Can substitute with yellow onion for a milder taste.
For the Sauce
  • 2 tablespoons Olive Oil Any neutral oil can be substituted.
  • 3 cloves Garlic Fresh recommended; garlic powder can be used.
  • 1/4 cup Soy Sauce For gluten-free, use tamari or coconut aminos.
  • 1/4 cup Pineapple Juice Can substitute with orange juice.
  • 2 tablespoons Honey or Brown Sugar Maple syrup is a substitute for different flavor.
  • 1 tablespoon Rice Vinegar Apple cider vinegar can work as a substitute.
Optional for Thicker Glaze
  • 1 tablespoon Cornstarch Use this for thickening the glaze if desired.
  • 2 tablespoons Water Mix with cornstarch for slurry.

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. In a mixing bowl, whisk together soy sauce, pineapple juice, honey, and rice vinegar.
  3. Place the chicken thighs in a bowl and pour half of the sauce over them. Toss to coat and let marinate for at least 15 minutes.
  4. Spread the marinated chicken on the sheet pan. Add pineapple, bell peppers, and onion. Drizzle with olive oil and toss gently.
  5. Roast for 25–30 minutes, flipping chicken and stirring veggies halfway. Brush remaining sauce over chicken in last 10 minutes.
  6. Broil for an additional 2–3 minutes for extra caramelization, watching closely to avoid burning.
  7. Remove from oven and serve garnished with sesame seeds, cilantro, or green onions. Serve over rice if desired.
