- Preheat your oven to 350°F (175°C). Gather your ingredients and prepare your workspace.
- In a large skillet, brown 1 pound of lean ground beef over medium heat for about 8-10 minutes until brown. Drain any excess fat.
- In a large mixing bowl, combine the cooked ground beef, frozen cubed potatoes, cream of celery soup, cream of cheddar cheese soup, 1 cup of shredded cheddar cheese, salt, and pepper. Stir until well combined.
- Transfer the mixed ingredients into a greased 9x13-inch casserole dish and spread evenly with a spatula.
- Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top of the casserole.
- Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until cheese is melted and golden brown.
- Let the casserole cool for about 5 minutes before serving.
