  • 1 cup Water Adjust according to desired consistency.
  • 2 tsp Tomato Paste More can be added for a stronger taste.
For the Seasoning
  • 0.25 tsp Dried Basil Use fresh herbs if available.
  • 0.5 tsp Dried Oregano Fresh oregano can also be substituted.
  • 1 tsp Kosher Salt Adjust according to personal preference.
  • Freshly Ground Black Pepper For seasoning.
For the Pasta and Greens
  • 6 oz Lasagna Noodles Broken; adjust cooking time for substitutions.
  • 1 cup Frozen Chopped Spinach Can use fresh spinach, add towards end.
For Creaminess
  • 0.25 cup Heavy Cream Substitute with half-and-half or whole milk.
  • Ricotta Cheese For serving.
  • 4 oz Mozzarella Cheese Sliced; low-moisture mozzarella is ideal.
  • Parmesan Cheese Optional.

Step-by-Step Instructions
  1. In a large pot, heat a drizzle of olive oil over medium-high heat. Add the ground beef and cook until fully browned, about 5-7 minutes. Drain excess grease.
  2. Add minced garlic, diced onion, dried basil, and dried oregano. Cook for about 5 minutes until onions are translucent.
  3. Introduce crushed tomatoes, chicken broth, water, and tomato paste. Stir and bring to a gentle simmer for 2-3 minutes.
  4. Add broken lasagna noodles, increase heat until boiling, then reduce to low and cover. Simmer for about 10 minutes.
  5. Stir in frozen chopped spinach and heavy cream. Continue cooking uncovered for an additional 5 minutes.
  6. To serve, place sliced mozzarella in bowls and ladle the soup over the top. Add a dollop of ricotta cheese.
