Step-by-Step Instructions for Hearty Vegetarian Meatloaf
  1. Rinse lentils under cold water, cover with water in a pot, boil, then simmer for 15-20 minutes until tender. Drain and reserve some cooking liquid.
  2. Heat olive oil in a skillet, add garlic, onions, bell peppers, carrots, and celery. Sauté for 8 minutes until tender and fragrant.
  3. Mix flaxseed meal with water in a bowl and let it sit for 7-10 minutes to thicken.
  4. Preheat oven to 380°F (193°C) and prepare a loaf pan with parchment paper.
  5. In a food processor, add lentils, sautéed vegetables, oats, oat flour, and flax egg. Pulse until it reaches a ground meat-like texture.
  6. Adjust mixture consistency with reserved lentil cooking water if needed, then transfer to loaf pan.
  7. Blend maple syrup, apple cider, ketchup, and chipotle in a blender for topping, then pour over the meatloaf.
  8. Bake for 45-50 minutes until firm and slightly caramelized on top. Let cool for about 10 minutes before serving.
  9. Slice and serve with mashed potatoes or fresh salad. Garnish with parsley if desired.
