Ingredients
  

For the Noodles
  • 4 cups Sweet Potato Noodles can substitute with regular noodles
For the Protein
  • 1 pound Sirloin Steak can be swapped with chickpeas or firm tofu
For the Vegetables
  • 2 cups Cauliflower can substitute with broccoli or snap peas
  • 1 Onion diced finely
  • 2 cups Curly Kale can substitute with spinach
For the Sauce
  • 2 tablespoons Red Curry Paste adjust to taste
  • 1 can (14 ounces) Coconut Milk for a lighter dish, consider omitting
For Flavor & Garnish
  • 1 tablespoon Lime Juice fresh juice is best
  • 2 tablespoons Vegetable Oil
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Ginger grated
  • 2 cloves Garlic minced
  • fresh Basil for garnish

Method
 

Cooking Steps
  1. Heat 2 tablespoons of vegetable oil in a large skillet over medium heat until it shimmers.
  2. Add one diced onion and sauté for 3–4 minutes until translucent.
  3. Add 2 minced garlic cloves and 1 tablespoon of grated ginger; stir for 1 minute.
  4. Add 1 pound of sliced sirloin steak and cook for 4–5 minutes until browned.
  5. Stir in 2 tablespoons of red curry paste; cook for 1–2 minutes.
  6. Pour in 1 can of coconut milk and bring to a gentle simmer.
  7. Add 2 cups of cauliflower and 4 cups of sweet potato noodles; cook for 5–7 minutes.
  8. Stir in 2 cups of curly kale and juice from half a lime; cook for 2–3 minutes.
  9. Season with salt and pepper to taste; serve warm garnished with fresh basil.
