- Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish with butter or parchment paper.
- Mix chopped strawberries, rhubarb, sugar, cornstarch, and lemon juice in a bowl and let sit for 10-15 minutes.
- Whisk together flour, oats, brown sugar, cinnamon, baking powder, and salt in a separate bowl. Cut in cold butter until crumbly.
- Press two-thirds of the crumb mixture into the prepared baking dish to form a base.
- Spread the fruit filling evenly over the crumb base.
- Sprinkle remaining crumb mixture over the fruit filling and gently press down.
- Bake for 40-45 minutes until the topping is golden brown and filling is bubbling.
