  1. In a medium bowl, combine the freshly chopped rosemary, thyme, minced garlic, olive oil, salt, black pepper, and Dijon mustard. Mix thoroughly until the ingredients form a coarse paste.
  2. Take your prime rib roast and place it on a clean cutting board. Generously rub the herb mixture all over the meat, ensuring every surface is thoroughly coated.
  3. Preheat your oven to 450°F (232°C).
  4. Place the seasoned prime rib roast bone-side down in a large roasting pan. Roast for 20 minutes at 450°F (232°C). Reduce the temperature to 325°F (163°C) and continue roasting for about 1.5 hours.
  5. Carefully remove the roast from the oven when it reaches the desired temperature. Loosely cover with aluminum foil and let it rest on a cutting board for at least 20 minutes.
