Ingredients
  

  • 2 cups fresh broccoli florets chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup cream cheese softened
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • Cooking spray or olive oil for greasing

Method
 

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with cooking spray or olive oil.
  2. In a large pot of boiling water, blanch the chopped broccoli for 2-3 minutes until bright green and tender. Drain and cool under cold water. Squeeze out excess moisture and chop finely.
  3. In a mixing bowl, combine the blanched broccoli, cheddar cheese, Parmesan cheese, breadcrumbs, cream cheese, egg, garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using). Mix until well combined.
  4. Using your hands, form the mixture into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
  5. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy on the outside.
  6. Remove from the oven and let cool slightly before serving.
