Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil or parchment paper.
  2. Scrub the Russet potatoes clean, dry them, poke holes with a fork, rub with oil, and sprinkle salt.
  3. Bake the potatoes on the baking sheet for 50-60 minutes until fork-tender. Cool for a few minutes.
  4. Increase the oven temperature to 450°F (232°C). Slice the cooled potatoes in half and scoop out some flesh.
  5. Mix melted butter, garlic powder, and onion powder. Brush mixture onto potato skins and bake for 10 minutes per side.
  6. Sprinkle cheddar and Monterey Jack cheese over the crispy skins, followed by crumbled bacon. Bake for an additional 5 minutes.
  7. Remove from the oven, sprinkle with chopped green onions, and serve hot with sour cream.
