  • 1 teaspoon vanilla extract or imitation vanilla
  • 2 cups chopped rhubarb can substitute with chopped apples or pears

  • 1 cup confectioner’s sugar or powdered sugar substitute
  • 2 tablespoons milk any milk variety will work
  • 1 teaspoon vanilla extract for additional flavor

Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet with non-stick cooking spray.
  2. In a large mixing bowl, whisk together the all-purpose flour, sugar, brown sugar, baking powder, cinnamon, cardamom, and salt.
  3. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the milk, egg, and vanilla extract until blended. Gently pour this into the dry ingredients and combine without overmixing.
  5. Fold in the chopped rhubarb gently using a spatula.
  6. Scoop heaping 1/4 cupfuls of batter onto the baking sheet, leaving space for expansion.
  7. Bake for 11-13 minutes, checking smaller fritters at 8 minutes until golden brown.
  8. Remove from oven and switch to broil; prepare the glaze by mixing confectioner’s sugar, milk, and vanilla extract until smooth.
  9. Brush glaze on fritters and return to broiler for 2-4 minutes, watching closely.
  10. Cool slightly before serving with a dusting of powdered sugar if desired.
