Preparation Steps
- Preheat the oven to 400°F (200°C) and prepare a baking sheet with non-stick cooking spray.
- In a large mixing bowl, whisk together the all-purpose flour, sugar, brown sugar, baking powder, cinnamon, cardamom, and salt.
- Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the milk, egg, and vanilla extract until blended. Gently pour this into the dry ingredients and combine without overmixing.
- Fold in the chopped rhubarb gently using a spatula.
- Scoop heaping 1/4 cupfuls of batter onto the baking sheet, leaving space for expansion.
- Bake for 11-13 minutes, checking smaller fritters at 8 minutes until golden brown.
- Remove from oven and switch to broil; prepare the glaze by mixing confectioner’s sugar, milk, and vanilla extract until smooth.
- Brush glaze on fritters and return to broiler for 2-4 minutes, watching closely.
