  • 1/2 cup Brown Sugar can substitute with coconut sugar
  • 1 teaspoon Vanilla Extract no substitutions needed
  • 1 teaspoon Ground Cinnamon can replace with nutmeg if preferred
  • 1/2 cup Butter (softened) can substitute with margarine or coconut oil
  • 1/2 cup Sugar adjust sweetness as desired
  • 2 large Eggs or use flax eggs for vegan option
  • 2 cups All-purpose Flour can substitute with whole wheat flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Sour Cream (or Greek yogurt) plain yogurt is acceptable
For the Crunchy Crumb Topping
  • 1/2 cup Brown Sugar can use white sugar if necessary
  • 1 teaspoon Ground Cinnamon increase for more flavor
  • 1/2 cup All-purpose Flour
  • 1/4 cup Cold Butter must be cold for best results

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease two 8x4-inch loaf pans.
  2. Mash ripe bananas in a mixing bowl until smooth, then mix with brown sugar, vanilla extract, and ground cinnamon.
  3. In a separate bowl, cream together softened butter and sugar until light and fluffy, then add eggs one at a time.
  4. Sift in flour, baking soda, and salt into the butter mixture and mix until just combined. Fold in sour cream and banana mixture.
  5. For the crumb topping, blend brown sugar, ground cinnamon, and flour, then cut in cold butter until crumbly.
  6. Pour batter into prepared pans and sprinkle crumb topping evenly over the batter.
  7. Bake for 35-40 minutes until a toothpick inserted comes out clean or with a few moist crumbs.
