- Preheat your Blackstone griddle or a large skillet over medium-high heat. 
- In a large bowl, combine the olive oil, minced garlic, salt, black pepper, and Italian seasoning. Mix well. 
- Add the chicken thighs to the bowl and toss to coat them evenly with the marinade. Let them marinate for at least 15 minutes for better flavor. 
- Once the griddle is hot, place the marinated chicken thighs on it. Cook for about 5-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F and is golden brown. 
- During the last minute of cooking, sprinkle the grated Parmesan cheese over the chicken, allowing it to melt slightly. 
- Remove the chicken from the griddle and drizzle with lemon juice. Garnish with chopped parsley before serving.
