Preheat your Blackstone griddle or a large skillet over medium-high heat.
In a large bowl, combine the olive oil, minced garlic, salt, black pepper, and Italian seasoning. Mix well.
Add the chicken thighs to the bowl and toss to coat them evenly with the marinade. Let them marinate for at least 15 minutes for better flavor.
Once the griddle is hot, place the marinated chicken thighs on it. Cook for about 5-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F and is golden brown.
During the last minute of cooking, sprinkle the grated Parmesan cheese over the chicken, allowing it to melt slightly.
Remove the chicken from the griddle and drizzle with lemon juice. Garnish with chopped parsley before serving.
