Method
 

Step-by-Step Instructions for Inside Out Chocolate Chip Cookies
  1. Cream the butter and sugars in a stand mixer on medium speed for about 2 minutes until fluffy.
  2. Add 1 large egg and 1 teaspoon vanilla extract to the mixture, beat until well combined.
  3. In a separate bowl, whisk together 2 cups flour, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon kosher salt, and 1/2 cup cocoa powder.
  4. Gradually mix the dry ingredients into the wet mixture on low speed until combined.
  5. Fold in 1 cup of white chocolate chips using a spatula.
  6. Cover the bowl with plastic wrap and refrigerate the dough for 45–60 minutes.
  7. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  8. Scoop tablespoon-sized balls of dough onto the baking sheets, spacing them 2 inches apart.
  9. Bake in the preheated oven for about 10–11 minutes until slightly underbaked in the center.
  10. Press extra white chocolate chips into the tops immediately after baking and cool on baking sheets for 15 minutes.
